Ingredients for Walnut Cake

  1. ½ cup margarine
  2. ¾ cup sugar
  3. 1 lemon, zested and juiced
  4. 4 eggs, separated
  5. 2 cups flour
  6. ¾ cup powdered sugar
  7. Apricot jam, to taste
  8. ¾ cup ground walnuts

Instructions for Walnut Cake

  1. Mix the margarine, flour, egg yolks, and lemon together, and pour the batter into a cake tin or baking tray greased with some extra margarine and flour. Your batter should be as high as a finger.
  2. Put the mix into the oven at a low temperature until it’s half-baked.
  3. Meanwhile, make a cream from the egg whites, the powdered sugar, and the ground nuts.
  4. Take the cake out of the oven, coat with apricot jam, and top with the cream.
  5. Place the cake back into the oven until it’s fully baked.
