- To make the crust, take about 2/3 of the butter (chilled) and chop into 1-inch cubes. Add the flour, sugar, egg, and a pinch of salt, then start kneading. The dough should be smooth and silky enough to roll out later.
- Cover the dough and put it in the refrigerator while you make the filling.
- To make the filling, cover a frying pan or pie pan with half the remaining butter (melted) and some sugar. Peel and thinly slice the apples. Place half the apples in the butter, then dust with sugar. Repeat the process with the remaining butter and apples. Dust with more sugar, and add cinnamon and raisins, if using.
- Cook the apple mixture, in the pan, in a 390-degree oven for 30 minutes. Meanwhile, roll out your dough.
- Further heat your apple mixture pan over a medium-low flame for another 25 minutes.
- Cover your pan with the rolled crust, pierce with a fork to let out the steam, and place back in the oven for another 25 minutes, or until golden-brown.
- When the pie is ready, remove from the oven and let it cool. Then, place a large plate on top of the pan and flip it over. The apples that were on the bottom will form a beautiful topping. Dust them with cinnamon, sprinkle with sugar, or top with whipped cream. Enjoy!
