Ingredients for Red Cabbage and Pomegranate Salad

Salad

  1. 1 medium head of red cabbage
  2. 1 tart green apple
  3. ¼ cup dried cranberries
  4. ¼ cup pomegranate seeds
  5. ¼ cup pine nuts or walnuts
  6. ¼cup sunflower microgreens (optional)


Dressing

  1. 2 cups (400 g) sugar
  2. 2 vanilla bean pods, split
  3. lengthwise and seeds
  4. scraped (pod reserved)

Instructions for Red Cabbage and Pomegranate Salad

  1. To prepare the dressing, mix all the ingredients together and bring to a boil. Let it simmer on low heat for 10 minutes, until some of the water evaporates and the dressing thickens. Let it cool.
  2. Meanwhile, peel the apple, and chop it and the cabbage. Add the other ingredients and toss to mix. Add the dressing, and let the salad sit for 30 minutes before serving.
